You don’t need to be an expert or to make fancy experiments at home to quickly know the differences between real, fake, or processed honey.
Here is what you need to know.
Real Honey Crystallizes
This is the first thing you look at every time you want to identify raw and organic honey.
Yes, there are some types of honey (ex. Acacia honey) that go through this process a little slower than others but eventually, all real honey crystallizes and changes shape and color.

Same Color In One Jar
Organic honey which was not altered in any way has the same color from bottom to top.

No Layers
Check from top to bottom if the honey has the same texture all around and there are no more than 10% separations.
Improper storage may make even real honey separate in layers.

Foam Is Not A Good Sign
Unheated raw honey should have no foam at the top of the jar.
Foam usually appears when the honey was heated or is fermented.

Fake Honey Is Mostly Liquid
A jar of honey that it’s liquid should raise concerns.
Faking honey with sugar syrup is a common practice between producers in order to increase their profits.
